Watermelon Gazpacho

4 cups Diced watermelon, seeds removed
1 Cucumber, peeled, seeded and diced
½ Red pepper, diced
2 T chopped basil
2 T chopped parsley
2 T red wine vinegar
1 T minced shallot
2 T olive oil
Salt and pepper

Pulse all ingredients together in food processor. Chill and serve.
